Diabetic Fudge



Why I Like This Fudge:

  • Roughly 1 net carb per serving

  • Uses erythritol for sweetening, not known for raising blood sugar OR insulin!

  • Erythritol also induces gut hormone secretions, promoting satiety and weight loss

  • Tastes great!


Ingredients List:

  • 6 oz unsweetened baking chocolate, finely chopped

  • 1.5 cups swerve confectioners sugar

  • 1 cup salted butter, sliced

  • 6 Tbsp heavy whipping cream

  • 2 tsp vanilla extract


Preparation Instructions:

  • Prepare an 8x8" pan lined with foil.

  • In a microwave safe bowl, add all the ingredients. Microwave for 30 second intervals at 50% power until just melted, stirring well in between.

  • Mix well until silky smooth. Pour chocolate mixture into the lined pan.

  • Freeze until fudge is set, about an hour.

  • Lift up the foil to remove the fudge from the pan. Cut into 16 bars and serve cold.
